    Offered for your consideration is a fine vintage Sabatier French-made Nogent-style chef's paring knife. Although there were many firms (including foreign) using Sabatier's fine name over the years, this example is a genuine Sabatier and a top-quality knife in the classic Thiers style. This knife was made in Thiers, France, home to a wealth of highly skilled multi-generational cutlers including some of the finest forgers and grinders in the world. They produced a superior product and gained worldwide acclaim that continues to this day. This example was made by Thiers-Issard and is from their 4-Star Elephant line. These knives are among the most highly regarded of all Sabatier knives and are also among the most finely crafted.  The vintage paring knives are the toughest to find in the whole series.  Sabatiers where generally purchased by professionals and serious home chef's and they were bought to be used.  Paring knives tend to see the most use in any set and gernally have a very high attrition rate.  Many ended up damaged, lost, used and re-sharpened until nothing but a pointy stub remains, or suffered the most horrible of fates for the paring the knife..the dreaded garbage disposer encounter.
    This is classic, premium-quality French chef's knife that offers the quality and performance that have made these knives the "gold standard" when it comes to classic, high-end cutlery. The knife features a hand forged blade and was crafted with the finest in Thiers workmanship. The knife offers full measures of the fine, old-world quality and performance that built the Sabatier name.
    The knife has seen light to moderate use and it remains in nice condition with no problems. The knife has not been buffed or polished and remains original.
    These Sabatier Nogent style paring knives are among the finest paring knives available and are prized by those who depend on their knives. The carbon steel blade was beautifully forged and precisely ground. It has a slow taper and it's quite stout, offering just a hint of flexibility around the tip. It remains straight and true with no bending, twist, or deformation. The blade has been sharpened, although not harshly or excessively. The edge is free of any nicks, chips, dings, or damage and remains very nice with just some normal wear. A few strokes on a good stone or hone will quickly have it razor sharp. The blade is free of any significant corrosion or pitting with just a bit of the usual fine surface peppering as shown. The aluminum ferrule is free of any splitting, marring, or damage and remains completely tight. The handle is of hard, dense molded resin and remains rock-solid. It's free of any cracks, chips, gouges, or damage with just some normal wear. The Sabatier 4-Star Elephant logo is very light and only partially visible as shown.
    The balance and feel are simply outstanding and this is what really sets these knives apart from the crowd. This is the kind of knife that is just a joy to use. Certain knives have that special feel that make you just want to go through the kitchen looking for things to slice, chop, etc.

    If you appreciate the very finest in vintage knives, this is an heirloom-quality knife that will be treasured through the generations. They just don't make them like this anymore!
