    Description

    Takamura Hamono is a Japanese Knifemaker who PIONEERED the use of the at the time, unpopular stainless steel. This series taps in to the advantages of carbon steel. Chromax is a proprietary steel by Takamura with excellent edge retention, hardness, and takes an edge similar to Aogami Super! The core steel is reactive, but has enough chromium content so it favors patina to rust. I prefer this to the R2 Migaki, which is a super popular knife. 210mm Takamura Gyuto with Stainless Clad Chromax steel. This knife HRC: 65This knife is a LASER GRIND. Out of the box it will be scary sharp and float through food like it isn't  there. The cost of this incredible laser like ability is a delicate edge. Extremely hard and thin, it will stay very sharp for a very long time. A few rules for hard thin knives.  1- No side to side motion- twisting the blade from side to side may result in chipping. Use a beater knife for this activity instead.2- Avoid Hard cheese, frozen food, bones, and Hard Squash. again chipping hazard, just use a different knife for these tasks3- Care- This knife must be treated with respect. if you throw it in the sink or the dishwasher it could become damaged, and the dishwasher can harm the wood handle. Do do that.        With the extra considerations of a "Laser" Knife it is best used in tandem with a "Workhorse" Knife, or thicker knife softer knife like a German steel knife.        With good care this is a rewarding knife which is a joy to use.
