    hun crafts their Edo Dual Density Knife using the exotic VG-10 high-carbon stainless-steel.  The blade features a
    tsuchime
    finish, meaning 'hammered' in Japanese.  This finish does two things:  it gives the knife a look that is reminiscent of the handcrafting techniques of ancient Japan; and creates tiny pockets of air that act as hollow-ground cavities, reducing drag and quickly releasing food from the blade.  The premium, ebony-black Pakkawood handle is ambidextrous and provides a comfortable, controlled grip.
    The wide, stainless-steel bolster is designed with contour-curved thumb and forefinger rests to reduce tension while cutting.
    The Edo also feature stainless-steel end-caps embossed with the Shun logo.
