Enjoy a REAL JAPANESE KNIFE with excellent fit and finish. Aogami Super steel, is one of the best steels for kitchen knives. It is a carbon steel, which requires more care than stainless steel. We have chose stainless steel cladding on the carbon core steel for the best of both worlds. A high performance carbon core steel, and low maintenance stainless clad knife.
Finish is Tsuchime, Stainless finish. Hammering reduces food sticking to the blade.
HRC ~ 65 This is extremely hard steel, and edge retention is much higher than most knife steel.
