    This JA Henckels 8" chef knife is a nice contrast to heavier knives like Wusthof; the blade is rather narrow at just 37mm at heel and with a really slender bolster like higher end K Sabatier knives; this one is marked "JA Henckels International Spain".  The handle fills the hand a little bit better than my Wusthof classic handles do, and with the really nice edge this knife took combined with the low weight, this knife is very nimble in the hand with great control.  It certainly went through a mechanical sharpener before it came to me, as each side has a wide scratch about 3mm up from the edge, but it's purely cosmetic.  This knife has a lot of life left and would serve for many more years even in a demanding pro kitchen.
    What I do to every knife
    Dull knives are dangerous, but how sharp is “sharp”?  Well, I make sure that any knife I sell will cut cleanly through newsprint and cardstock, and in the case of kitchen cutlery I make sure it will slice a ripe tomato cleanly with good cutting feel too.
    I hand sharpen to keep the bevel on the blade close to factory, but ensure it’s consistent (which isn’t always the case), and go all the way up to a 4000 grit finish on the edge and then strop the blade to a high, near-mirror polish.  After lots of experimentation, I've found this process leaves an edge with just enough bite to work well in just every situation that’s right for the knife, whether it’s kitchen tasks, breaking down cardboard, or dressing a kill in the field!   After the edge is done, I polish all the metal including the face of the blade, and knives with wood on the handles or scales get a bit of Mahoney’s walnut oil and wax to protect the wood (plus it looks and feel great). Folding knives are cleaned up inside and out and get a dab of Hoppe’s no.9 oil on the pivot of the blade to smooth out the action.

    Whether you’re getting a pocketknife or kitchen cutlery from me, you can be sure it’s got a great edge that will perform well for you – guaranteed! Most of the knives I sell have been previously used and have lots of life left in them, they’re not perfect and often show scratches on the blade, have some dings on them or other superficial signs of use.  They’ll function at least as well as they would have from the factory.
    A little about me
    I spent 3 years working as a sous chef in a local restaurant learning firsthand the value of having a sharp knife as a food prep tool, and appreciating the art needed to coax the best edge out of a knife.   Just recently, I watched a niece “sawing” away with a dull knife as she was prepping a meal with, and just as I trying to get her to stop, she cut herself badly enough to need stitches! Plus, I don’t know about you, but when I need a knife for everyday tasks, having a sharp makes that task just a little bit more satisfying.  So, here I am, offering used knives that have been sharpened and reconditioned to perform at least as good as new.
